Coleslaw: An Upgraded Side Dish

Growing up, I used to HAAAAATE coleslaw. Eww, just yuck. I didn't like it. When the church used to have a fish fry, the coleslaw would either be too watery from milk and vinegar or, have too much mayo that it just is a GLOB of white matter with specs of orange green cabbage and carrot confetti.


Fast forward and I just adopted my version of coleslaw (even if some may not consider it a coleslaw). But wait, coleslaw or slaw is basically, is a side dish consisting primarily of finely shredded raw cabbage with a salad dressing, commonly either vinaigrette or mayonnaise.


Ingredients

  • 1 package of premade shredded purple cabbage

  • 1 red bell pepper diced

  • 1.5 c. shredded carrots

  • 1 large avocado diced

  • 1/3 c. steamed edamame or green peas (optional)

  • 2 tbsp. of coconut aminos

  • 2 tbsp. sesame oil

  • 2 tbsp. of hemp seeds (optional)

  • 1/3 c. dried cranberries

  • 1/4 c. of cashew nuts or nuts of choice (optional)

  • 1 tbsp. sweetener of choice (honey, agave etc.)


Instructions


  1. Blend all ingredients in a HUGE bowl and mix

  2. If you want to it chilled, refrigerate for 15-20min

  3. ENJOY
